One of our amazing golden girls, Shannon of @fitstrongshann, created this amazingly versatile pancake + waffle batter recipe that you can whip up in a flash on a Sunday morning. It's packed with healthy fats, is gluten-free, can be made dairy-free, and supercharged by our Golden Fuel.
Lemon Blueberry Golden Waffle / Pancake Batter Mix by @fitstrongshann
makes 1-2 servings
Half a banana, mashed
4-5 tbsp milk of choice (Shannon used Almond)
1tbsp yogurt of choice (Shannon used vanilla @siggisdairy)
1- 2 tbsp lemon juice
1 tsp lemon zest
2 tbsp cassava flour + 2 tbsp coconut flour
1 tsp Live 24k Golden Fuel
1 tsp baking powder
1 tsp baking soda
1. Mix the wet ingredients together in a large bowl and set aside. Mix the dry ingredients together in a small bowl and set aside.
2. Add the dry ingredients into the wet ingredients, and fold in fresh blueberries. Let batter sit.
3. Heat up a waffle iron (or griddle, if you're making pancakes), and grease with oil of your choice (we recommend coconut or avocado oil). Pour batter on to create pancake or waffle of your desired size, and cook accordingly. Top with whatever fresh fruit, seeds, and nuts you wish, and enjoy!
